How to Cook Rice Parathas

Yields: 8 parathas

Ingredients needed to make Rice Parathas:

For the dough:

  • 2 cups whole wheat flour
  • Salt to taste
  • 2 tbsp vegetable oil

For rice stuffing:

  • 1 cup cooked rice
  • ¼ cup onions, chopped
  • 1 tsp green chilies, chopped
  • 1 tbsp fresh cilantro, chopped
  • 1 tsp fresh mint leaves, chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 2 tsp chili powder
  • ¼ tsp ground turmeric
  • Salt to taste
  • 1 tbsp vegetable oil

Cooking instructions for Rice Parathas:

  • To make the dough, dump all its ingredients in a bowl and pour in enough water necessary to knead them together into a soft dough.
  • Split the dough into 8 equal parts and set aside.
  • To make the rice stuffing, drizzle a lashing of oil in a sauté pan and heat it over moderate heat.
  • Throw in the cumin seeds and toast them for several minutes, stirring often, until they start popping.
  • Empty the cup of onions into it and sauté for 5-8 minutes, stirring periodically, until they soften and caramelize.
  • Stir in the ginger-garlic paste and continue to sauté further for a couple of minutes or until the raw smell of the paste disappears.
  • Scatter the chopped green chilies over the mixture and sprinkle the chili powder, ground turmeric as well as a pinch of salt on top.
  • Stir them all together to mix well and dump the cooked rice into it.
  • Stir it one more time until well combined and cook the mixture for next couple of minutes, stirring often, until the rice is heated through.
  • Sprinkle the chopped fresh herbs on top and fold them into the mixture until distributed evenly.
  • Remove from heat and set aside to cool to room temperature.
  • Split it into 8 equal portions and set aside until necessary.
  • To assemble, flatten each ball of dough into a 3’’ wide circle and spoon a portion of the filling onto the middle of the dough round.
  • Gather all the sides of the dough round into the centre and crimp them together to seal.
  • Roll it back into a ball and place it on a floured surface.
  • Flatten it out again with a floured rolling pin, into a 6’’ wide disc and set aside.
  • Heat a griddle over moderate flame and brush few drops of oil to grease well.
  • Place one stuffed dough disc onto the hot griddle and fry each side for 5 minutes or until it turns golden brown on all sides.
  • Cook rest of the parathas in a similar fashion and serve hot alongside an Indian curry.
