Tigres Rabiosos Recipe
Tigres Rabiosos is a Latin dish with purported Chilean origins consisting of mussels in a tomato and wine sauce. Serve with a good a crusty bread.
Ingredients
- For the sauce:
- 4 cups canned diced tomatoes, drained
- 2 garlic cloves, thinly sliced
- 1 yellow onion, julienned
- Zest of 1 lemon, finely grated
- ¼ cup extra-virgin olive oil
- 1 tsp red chile flakes, dried
- ¼ tsp freshly ground black pepper
- 1 tsp fine salt
- For the mussels:
- 2 lb black mussels, scrubbed
- 2 garlic cloves, crushed
- 1 bay leaf
- 2 tbsp fresh chives, thinly sliced
- 4 fresh thyme sprigs
- 5-6 black peppercorns
- ½ lemon, for serving
- ½ cup dry white wine
- Rock salt, as required
Instructions
- To make the sauce, heat a lashing of oil in a 2-quart saucepan over moderate flame until it starts shimmering.
- Throw in the onions and sauté for about 10 minutes, stirring often, until it softens and turns lucid.
- Stir in the garlic and continue to cook for another 5 minutes or until it caramelizes.
- Sprinkle the red chile flakes over the mixture and empty the cups of diced tomatoes into it.
- Stir them all together and bring it to a simmer over low heat.
- Continue to cook likewise for about half an hour and sprinkle a dash of salt and fair amount of black pepper to season.
- Turn off the heat and tip it into a food processor.
- Pulse them into a smooth puree and strain it through a fine-mesh sieve to smooth it out further.
- Stir in the lemon zest until distributed into the sauce and pour it back into the saucepan; keep aside until required.
- To cook the mussels, place them in a large pot and pour in wine.
- Sprinkle the peppercorns, thyme and bay leaf into the pot, along with garlic and stir them all together to coat well.
- Place the pot over moderately high heat and bring it to a boil.
- Place a lid on top and cook for about 5 minutes or until the mussels snap open.
- Turn off the heat and throw away the ones which are still closed.
- Set aside until cool enough to handle and scoop out the flesh from the shells.
- Throw away the top half of the shells and toss the mussels in the pureed sauce.
- Sprinkle the chives on top and stir them all together to mix well.
- Cook for a couple of minutes or until heated through and turn off the heat.
- To serve, sprinkle the rock salt along the edges of a large serving platter and place the empty shells over it.
- Place a mussel into each shell and smother each of them with lots of sauce.
- Serve right away alongside lemon wedges.
