How to Bake Schnecken

Ingredients needed to make Schnecken:

For the dough:

  • 3 1//3 cups bread flour
  • ¼ oz fast rise yeast
  • 2 eggs
  • ½ cup+ 2 tbsp milk
  • 3 tbsp sugar
  • 1/3 cup unsalted butter
  • ½ tsp salt

For the syrup:

  • ½ cup +1 tbsp unsalted butter
  • 4 tbsp maple syrup
  • 2 tbsp turbinado sugar
  • 1 cup chopped walnuts
  • 3 tbsp light corn syrup

For the glaze:

  • 2 tbsp milk
  • 1 egg

For the filling:

  • 1 tbsp ground cinnamon
  • ½ cup light brown raw sugar
  • 3 tbsp granulated sugar

Cooking instructions for Schnecken:

  • Grease a 12 cup muffin mold with a knob of butter.
  • Spread a sheet of parchment paper across a roasting pan, larger in size to cover the prepared mold.
  • Place the flour in a large mixing bowl and stir in yeast, sugar as well as a dash of salt until well combined.
  • Empty ½ cup milk into a saucepan, along with 1/3 cup unsalted butter and heat it over slow flame until the butter melts.
  • Crack the eggs into it and beat it into the mixture until they blend thoroughly.
  • Drizzle this hot mixture into the dry ingredients gradually in a steady stream while beating them together at the same time until they gather together into a smooth dough.
  • Transfer the dough onto a floured surface and knead for 7-10 minutes or until it is pliant.
  • Roll it into a ball and place it in a pre-greased bowl.
  • Roll it along the sides of the bowl to oil it lightly, cover and let it rest for an hour in a warm place until it rises.
  • Meanwhile, to make the syrup, beat the butter with an electric mixer, until it creams and sprinkle the sugar into it.
  • Continue to beat them together until sugar dissolves and whisk in the syrups until well combined.
  • Spoon it into muffin cups and sprinkle a tbsp of chopped walnuts into each of them.
  • Warm up your oven to 350 degrees F.
  • Punch the dough and knead it a couple of times on the floured surface.
  • Flatten it into using a rolling pin, into a large, 24×12’’ rectangle, with long side facing you.
  • For the glaze, beat its ingredients together until mixed thoroughly and brush it all over the rectangle.
  • Dump all the filling ingredients in a small bowl and stir them all together to mix well.
  • Scatter them all over the dough and roll it into a cylinder, starting from the longer side.
  • Slice into 12 equal portions and place them into prepared muffin cups, with the cut side facing up.
  • Set aside for about 20 minutes to let it rise again and bake for about 25 minutes or until they are baked through and turn golden brown.
  • Place the lined roasting pan on top of the muffin pan and invert them while holding them together tightly.
  • Set the rolls aside to cool and serve.
