Chicken Negimaki
Chicken negimaki is a delicious Japanese maki roll make with chicken rolled around scallions.
Ingredients
- 4 ( 6 oz each) boneless chicken breasts, skinned and bashed into 1/8’’ thick pieces
- 8 asparagus spears, trimmed and peeled
- 1/3 cup scallions, thinly sliced
- 2 tsp ginger, peeled and finely grated
- 2 garlic cloves, lightly crushed
- 3 tsp sesame seeds, toasted
- 1/3 cup mirin
- 2 tsp fresh lemon juice
- 1 tbsp white miso
- 1/3 cup low-sodium soy sauce
- ½ tsp toasted sesame oil
- Sea salt to taste
Instructions
- Warm up your broiler.
- Spread a sheet of aluminum foil across a rimmed baking sheet and place a wire rack over it.
- Pour mirin and soy sauce into a bowl and whisk in ginger, miso as well as garlic until well combined.
- Pour it into a small saucepan and bring the mixture to a boil.
- Reduce it to a simmer and cook at moderate heat for about 5 minutes or until it is reduced to ½ cup.
- Whisk in a splash of lemon juice, followed by a drizzling of sesame oil until they blended thoroughly and set aside until it cools down slightly.
- Spoon in 2 tbsp of the prepared sauce into a small bowl and keep it aside.
- Fill a large, deep-bottomed skillet with salted water and drop in the asparagus.
- Cook them for about 3 minutes or until they soften yet retain their crispiness.
- Drain them out into an ice water bath and set aside until they cool down completely.
- Drain them out into a bowl and dab with a kitchen towel to dry.
- Slice each flattened chicken breast longitudinally into a couple of strips and smother them with a lashing of the cooled sauce.
- Toss a tsp of sesame seeds and 2 tbsp scallion slices together in a small bowl until well combined.
- Sprinkle rest of the sesame seeds as well as scallions onto each chicken and arrange a cooked asparagus spear onto each chicken slice.
- Roll it up into a tight cylinder and place it onto a wire rack, with the seam-side facing down.
- Roll out rest of the chicken cylinders in a similar fashion and place them onto the wire rack.
- Paint each roll with the sauce and place them in the broiler.
- Broil for about 5-7 minutes, bathing them with the sauce from time to time and turning them halfway while cooking.
- Remove from heat and set aside until cool enough to handle.
- Slice each rolled chicken into 1’’ pieces and arrange them onto a platter.
- Smother them with a couple of tbsp sauce and garnish with sesame seeds and rest of the scallions.
- Serve warm.
