How to Cook Cajun Chicken Wings

Ingredients needed to make Cajun Chicken Wings:
- 3 lb chicken wings, chopped into flats and drumettes
For the rub:
- 1/8 tsp cayenne pepper
- 1 tsp paprika
- ¼ tp cumin
- ¼ tsp dried oregano
- ½ tsp dried thyme
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp freshly ground black pepper
- ¼ tsp kosher salt
- 1 tbsp baking powder
For the sauce:
- 1 tbsp Worcestershire sauce
- ¼ cup Louisiana-style hot sauce
- ¼ cup butter
Cooking instructions for Cajun Chicken Wings:
- Add the ingredients of the rub into a small bowl and toss them well together to mix thoroughly.
- Blot the chicken wing dry with a paper towels and dump them into a large mixing bowl.
- Sprinkle the prepared rub all over the meat and toss them several times to coat well with the seasoning.
- Place the seasoned chicken, spaced apart in a single layer, on a wire rack, placed on top of baking sheet, which is in turn lined by aluminum foil.
- Leave it in the fridge for at least 8 hours or overnight if you can manage.
- After the time of marination is over, add a knob of butter into a saucepan and heat it over moderate flame until it melts.
- Empty the cup of hot sauce into the pan, along with a splash of Worcestershire sauce and whisk them together to mix well.
- Remove from heat immediately and pour it into a bowl; set aside.
- Fill a chimney with charcoal and heat it until the latter is hot and covered with gray ash.
- Transfer it to the charcoal grate and shift it to one side.
- Place the grill rack at proper position, put the lid on and heat it up to 5 minutes.
- Brush a lashing of oil onto the grill rack and arrange the wings on it, with the skin side facing down.
- Put the lid back on and grill for about 45 minutes or until the skin browns and turn crisp.
- Transfer the wings into a large bowl using tongs and pour in the prepared sauce.
- Toss them well until they are coated thoroughly with the sauce.
- Transfer it to serving plates and serve right away.
