How to Cook Masa Cakes With Cabbage Slaw

Ingredients needed to make Masa Cakes With Cabbage Slaw:

For the masa cakes:

  • 2 cups masa harina
  • 1 cup mozzarella cheese, grated
  • 1 1/3 cup warm water
  • Pinch of salt
  • Vegetable oil, for required

For the cabbage slaw:

  • 1 large carrot, grated
  • ½ head cabbage, shredded
  • ½ onion, thinly sliced
  •  1 tsp red pepper flakes
  • ½ tsp brown sugar
  • ½ cup apple cider vinegar
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ cup water

Cooking instructions for Masa Cakes With Cabbage Slaw:

  • For the cabbage slaw, toss the carrot, cabbage and onion together in a large mixing bowl until well combined.
  • Pour the apple cider vinegar in another bowl and whisk in rest of the ingredients until they blend into a uniform mixture.
  • Drizzle the dressing over the tossed veggies and give it a nice stir to mix well.
  • Put a lid on and leave in the fridge for a couple of hours or until the masa cakes are ready to serve.
  • Stir a dash of salt into the masa harina and pour in water while beating it into the mixture, until all of it is used up into the blend.
  • Work them together with your fingers and knead it into a moist, smooth dough.
  • Add a splash of water into the dough in case it tends to appear too dry or knead in more masa harina if the dough becomes a tad too sticky.
  • Wrap it up in a clean kitchen towel and set aside in a bowl for about 10 minutes.
  • Oil your hands lightly and pinch out 8 balls from the dough, each of about 2’’ wide.
  • Poke a small depression into the centre of each ball and spoon a tbsp of grated cheese into the indentation.
  • Wrap the edges of the dough around the stuffing and pinch the free ends together to seal.
  • Shape the dough with your fingers into a round disc, of about ¼’ in thickness, making a point that the filling doesn’t come out.
  • Make rest of the masa cakes in a similar manner.
  • Drizzle a lashing of oil in a large skillet and heat it over moderately-high heat.
  • Place the cakes on the hot skillet and fry each side for a couple of minutes or until it turns golden brown.
  • Flip them over and cook the other side in a similar fashion.
  • Serve warm masa cakes alongside the cabbage slaw.
