How to Make Iced Green Tea

Makes: 3 quarts

Ingredients needed to make Iced Green Tea:

  • ¼ oz Chinese green tea leaves
  • ¾ cup ginger syrup (recipe below)
  • ¼ cup pomegranate syrup
  • Juice of a lemon
  • Lemon slices, to garnish
  • Mint leaves, to garnish
  • Pomegranate seeds, to garnish

For the ginger syrup:

  • ½ lb fresh ginger root, skin on
  • 2 cups water
  • 3 cups white sugar

Cooking instructions for Iced Green Tea:

  • To make the syrup, chop the ginger into smaller chunks and pulse them in a food processor to form a fine paste, with a texture resembling that of rough wood chips.
  • Pour water into the saucepan and stir in the sugar.
  • Bring the mixture to a boil and reduce it to a simmer at once.
  • Continue to simmer for about 5 minutes and stir in the ginger paste.
  • Turn off the heat and pour the syrup into a jug; it will make about 5 cups.
  • Leave it in the fridge overnight to steep.
  • Pass it through a fine mesh to get rid of the fine ginger threads and discard the residues.
  • Transfer the syrup into a bottle and leave it in the fridge until necessary; it can be preserved for as long as several weeks when stored in fridge.
  • To make the iced tea, take the green tea leaves in a large bowl.
  • Pour 3 ½ cups of water into a pot and heat it to 170 degrees F; set aside to cool for about 5-7 minutes and then pour it over the tea.
  • Cover and let it rest for about 10 minutes to let it steep and then strain it through a strainer into a jug.
  • Add a splash of lemon juice, followed by ¾ cup of the ginger syrup and pomegranate syrup.
  • Empty 8 cups of water into it and stir them all together until well combined.
  • Set aside in the refrigetor for a couple of hours and pour it into tall glasses.
  • Drop some ice cubes into each glass of iced green tea and top it up with pomegranate seeds.
  • Muddle the mint leaves and place it on top of the seeds.
  • Finish it off with a lemon slice on top and serve chilled.
