How to Cook Pork Lo Mein

Serves: 2-4

Ingredients needed to make Pork Lo Mein:

  • ½ lb pork tenderloin

For the marinade:

  • 1 tsp rice wine
  • 2 tsp cornstarch
  • 1 tsp soy sauce
  • 1 tsp sugar

For the vegetables:

  • 2 green onions, shredded
  • 5-6 large assorted mushrooms, sliced into thin strips
  • 1 red bell peppers, sliced into thin strips
  • ½ cup bamboo shoot, sliced into thin strips
  • 1 medium zucchini, sliced into 1’’ strips
  • 1 tbsp fresh ginger, finely chopped

For the sauce blend:

  • 1 cup chicken broth
  • 2 garlic cloves, peeled and crushed
  • 4 tsp cornstarch
  • ¼ tsp fresh ginger, finely chopped
  • 2 tbsp oyster sauce
  • 4 tbsp peanut oil

For the noodle:

  • 1 lb fresh Chinese egg noodles
  • 3 ½ tbsp soy sauce, divided
  • 2 tbsp oyster sauce
  • 1 ½ tsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tsp peanut oil

Cooking instructions for Pork Lo Mein:

  • Chop the meat into small chunks and set aside.
  • Place all the ingredients of the marinade in a large bowl and whisk them thoroughly into a smooth mixture.
  • Throw in the pork pieces and stir well until properly coated with the marinade.
  • Add all the sauce ingredients in a separate bowl and stir them all together until mixed thoroughly.
  • Bring a large pot of water into a boil and dump the noodles into it to parboil for 3 minutes.
  • Drain them in a colander and rinse under running cold water to prevent the strands from sticking to each other.
  • Boil more water in another pot and maintain its heat until required.
  • Drizzle 2 tbsp oil in a wok and heat it over moderate heat until it shimmers.
  • Throw in the veggies and stir fry for about 2-3 minutes, along with a dash of salt and a tsp of sugar; remove from heat and set aside in a bowl.
  • Heat rest of the oil in the wok and throw in the marinated pork.
  • Stir fry them for several minutes or until they are cooked through and brown slightly.
  • Return the veggies into the wok and give them a nice stir to mix well.
  • Dump the cooked noodles into the pot of hot water and let them soak for 15 seconds or until heated through.
  • Drain them out into a colander and transfer them into the large bowl.
  • Add its seasonings into the noodles, followed by the cooked veggie-meat mixture and toss them all together until mixed properly.
  • Pile up the noodles into serving bowl and serve warm.
