How to Cook Grilled Tropical Chicken With Peanut-Plantain Dip

Ingredients needed to make Grilled Tropical Chicken With Peanut-Plantain Dip:

  • 1 ½ lb boneless chicken breasts, skinned and chopped into 1 ¼’’ chunks
  • 2 scotch bonnet chilli peppers, deseeded, ribs removed and minced
  • 1 unripe pineapple, chopped into bite-sized chunks
  • 1 unripe mango, chopped into 1 ¼’’ chunks
  • 2 firm avocados, chopped into 1 ¼’’ chunks
  • 1 unripe papaya, chopped bite-sized chunks
  • 1 ripe, mushy plantain, sliced
  • 1 cup fresh orange juice
  • ½ cup dark rum
  • 1 cup packaged pineapple juice
  • 1 tbsp fresh lemon juice
  • ½ tsp ground allspice
  • 2 tbsp packed dark-brown sugar
  • ½ cup peanut oil

Cooking instructions for Grilled Tropical Chicken With Peanut-Plantain Dip:

  • Soak 36 wooden skewers in water and set aside for about 15 minutes or until required.
  • Whisk the all the juices, rum, allspice, sugar, peppers and peanut oil together in a medium saucepan until well combined and heat until it starts boiling.
  • Reduce it to a simmer and continue to cook likewise at slow heat for half an hour.
  • Turn off the heat and set aside this marinade aside to cool.
  • Pour half of it in a food processor and drizzle rest of it in a couple of glass baking dishes; keep aside until required.
  • Insert a chicken piece through a skewer, followed by a couple of fruits, except plantain.
  • Prepare rest of the skewers until all the chicken and fruits are used up.
  • Arrange them in the baking dishes and flip them over to coat well with the marinade.
  • Wrap the surface with a plastic sheet and leave in the fridge for half an hour.
  • Warm up your outdoor grill over moderately high heat.
  • Plop the plantain slices into the food processor and pulse them into a smooth puree.
  • Pour it into a serving bowl and set aside until the time of serving.
  • Transfer the skewers onto the hot grill rack and grill for about 5-7 minutes.
  • Flip it over to grill the other side similarly until cooked through.
  • Arrange the skewered chicken and fruits on a large serving platter and serve alongside the prepared dip.
