How to Cook a Three Level Omelet (Omlette), Russian-Style

Ingredients needed for a three level omelet (Omlette):

  • 6 eggs (2 eggs for each level)
  • Mayonnaise, 4 tablespoons
  • Tomato sauce, 1 tablespoon
  • ½ Bulgarian pepper (red, for tomato sauce), seeded
  • Fresh spinach, 1 bundle
  • Fresh greens (parsley, dill) – ½ bundle
  • Spices (if you prefer) – paprika for tomato level and turmeric for eggs level
  • Salt (season to taste)

Cooking instructions for a three level omelet (Omlette):

Prepare first level – spinach. Chop finely spinach and greens. Beat up 2 eggs, fold in 1 tablespoon of mayonnaise and salt, and add chopped spinach and greens. Pour the mixture (first omelet level) into oiled pan or deep baking tray. Better use Teflon pan or put baking paper into baking tray before, otherwise it might be problematic to take the omelet out afterwards. Preheat oven up to 180º C and put the baking tray in for 7-10 minutes.

Meanwhile, beat up another 2 eggs, 1 tablespoon of mayonnaise, 1 tablespoon of tomato sauce, paprika and finely chopped Bulgarian pepper. Take out from oven the first level and leave it to cool down a little bit. Keep the oven on. When the first level has cooled down, pour the red mixture on top of green spinach level. Put the baking tray with two levels back in the hot oven and cook for another 7-10 minutes.

Meanwhile, prepare third level. Beat up last 2 eggs, 2 tablespoons of mayonnaise, turmeric and salt. Take out from oven two level omelet and leave it to cool down a little bit again. When omelet has cooled down, pour the third level into baking tray and cook until ready (about 10 minutes).
Take out from the oven and let cool down a little bit, then turn it over on the plate. You can cut it in two parts and put one on another, you will get half-moon shape.
