Serves: 10

Preparation time: 40 mins

Cooking time: 50 mins

Ingredients needed to make Marble Spice Cake:

  • 3 ¾ cups cake flour
  • ½ tsp salt
  • 1 ½ cups sugar
  • 3 tsp baking powder
  • ¾ cup milk
  • 2 sticks unsalted butter, softened
  • 3 tbsp unsulphured molasses
  • 3 eggs, at room temperature
  • 1 tsp grated nutmeg
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground cloves

Cooking instructions for Marble Spice Cake:

  • Grease one 12 cup bundt pan with a knob of softened butter and dust it with flour generously; tap its sides to get rid of any excess.
  • Place a rack midway within an oven and warm it up to 350 degrees F.
  • Stir the baking powder into the cake flour until mixed well and set aside
  • Place the butter in a large mixing bowl and cream it medium speed using an electric mixer, until it turns light and fluffs up.
  • Whisk in the sugar, followed by a dash of salt until all of them blend into the creamed butter thoroughly and continue to beat for 5 more minutes to lighten it up further.
  • Crack the eggs into it, one by one, and beat them into the mixture every time until they blend together to form a fluffy, smooth mixture.
  • Sift ½ of the dry mixture into this whisked blend and fold them together until well combined.
  • Beat in milk gradually until it blends thoroughly and fold in rest of the dry mixture until they are mixed properly into a uniform, smooth batter.
  • Continue to beat the final batter briefly for about 10 seconds and pour half of it in a separate bowl.
  • Stir in a dash each of spices as well as the molasses into one portion of the batter until mixed well.
  • Spoon 2 tbsp of plain batter into the prepared pan, followed by equal spoonfuls of the spiced-up batter.
  • Repeat the process until both the batters are used up, while running the knife through them haphazardly to give them marbled patterns.
  • Bake the marble cake for 50 minutes or until it appears fluffy and is baked through.
  • Remove from oven and set aside to cool in the mould for 5 minutes.
  • Flip it over onto a rack and allow the cake to cool further to room temperature.
  • Slice and serve.
