How to Cook Quesadillas with Taco Dip

Ingredients needed to make quesadillas with taco dip:
- 4 white corn tortillas, each about 6’’ wide.
- ½ medium onion, halved and thinly sliced
- ½ medium green or red bell pepper, seeds removed and sliced into fine strips.
- 1 fresh Serrano pepper, halved, seeds removed and sliced into fine strips.
- 2 thin tomato slices, halved vertically.
- 2 tsp vegetable oil
- ½ cup ( 2 oz) Monteray Jack cheese, shredded
- 1 tbsp fresh cilantro leaves
- Lime wedges, for garnishing
- Light dairy sour cream, optional
- Cooking spray
For the taco dip:
- 2 tbsp sour cream
- 1 cup ketchup
- ¼ cup water
- 1 packet (2 ½ oz) taco seasoning.
Cooking instructions for quesadillas with taco dip:
- Heat oil in a large skillet over moderately high heat and throw in the onions.
- Stir-fry the onions for a minute and add the bell pepper as well as Serrano strips.
- Continue to saute the veggies for about 3-5 minutes or until they are just cooked and the onions turn translucent; remove from heat and set aside.
- Grease one side of every tortilla with cooking spray and arrange two of them on the plate with the oiled side facing down.
- Top one of them with ¼ of the shredded cheese and half of the sauteed onion-bell pepper mixture on top.
- Arrange the tomato slices over the onion mixture followed by a dollop of the sour cream.
- Sprinkle a tbsp of cilantro on it and cover it up with another ¼ part of remaining cheese.
- Top the second tortilla similarly and place rest of the tortillas on top of them, with the oiled side facing up.
- Heat a griddle over moderate heat and place the quesadillas carefully over it.
- Cook them for about 5 minutes on one side or until the tortillas brown slightly and the cheese melts.
- Flip it over carefully and cook the other side similarly for another 5 minutes.
- Slice each quesadilla into four equal wedges and arrange them on the serving plate.
- To make the dip, whisk the sour cream into a cup of ketchup until well mixed.
- Empty the packet of taco seasoning into the mixture, along with a dash of salt and stir them well together to mix.
- Transfer the mixture to a serving cup and serve along side the warm quesadillas.
