Instructions

This chocolate buttermilk sheet cake is in the style of a classic Texas sheet cake and the buttermilk gives it a rich and creamy flavor and texture.

Ingredients

  • For the Cake:
  • Sugar 200 gr / 7 oz. / 1 cup
  • Flour 120 ml / 4 oz. / 1 cup
  • Salt 2 gr / 1 pinch
  • Butter 115 gr / 4 oz. / ½ cup
  • Cocoa powder 30 gr / 2 tablespoons
  • Water 120 ml / 4 oz. / ½ cup
  • Buttermilk 60 ml / 2 oz. / ¼ cup
  • Ingredients for chocolate icing - For the thin cake, double the amount:
  • Buttermilk ¼ cup / 60 ml
  • Cream ⅜ cup / 90 ml
  • Cocoa powder 6 tsp / 15 gr
  • Butter 1 tbsp / 15 gr
  • Powdered sugar ½ cup / 50 gr
  • Milk/dark chocolate ¼ cup / 50 gr
  • Whole egg 1 (beaten)
  • Baking soda ½ tsp / 2 gr
  • Vanilla extract ¾  tsp / 3 ml

Instructions

For the Cake:

  • Preheat your oven to 180 C / 350 F.
  • While oven is preheating in a saucepan, add the water, butter, and cocoa powder, and bring them to a boil.
  • In a bowl, mix the buttermilk, vanilla extract, and egg well, then add the flour, sugar, and salt and mix again until everything is homogenous.
  • Once the butter has melted in the boiling water with the cocoa in the saucepan, mix them in the bowl with the other ingredients. Using vegetable oil or oil spray, grease the baking pan, and pour your cake batter in.
  • Bake the cake for a total of 30 minutes.

For the Icing:

  • In a small saucepan, heat up the buttermilk, cream, cocoa, and butter until the butter has completely dissolved while constantly whisking.
  • Make sure there are no cocoa clumps left (I strained the mixture through a sieve and removed the leftover clumps of cocoa) before taking the saucepan off the heat and adding the powdered sugar and the chocolate.
  • Mix once again until everything is smooth, and pour the glaze over the cake while they are both warm.

Chill the cake, and once completely cooled down, portion it into 12 equal pieces. 

Garnish with whipped cream and ground walnuts or cinnamon whipped cream right before serving.
