How to Cook Paneer-Stuffed Peppers

Ingredients needed to make Paneer-Stuffed Peppers:

  • 9 oz paneer or whole milk ricotta
  • 4 large red bell peppers, stemmed, deseeded and halved
  • 3 large tomatoes, chopped
  • 1 onion, chopped
  • 2 ½ oz green beans, chopped
  • 2 tsp fresh ginger, finely chopped
  • One handful fresh cilantro, chopped
  • 2 handfuls frozen peas
  • 5 tbsp double cream
  • 1 ¼ tsp cumin seeds
  • ½ tsp ground turmeric
  • 1 ½ tsp garam masala
  • 2 tsp ground coriander
  • ½ tsp red chili powder
  • Salt to taste
  • 4 tbsp vegetable oil
  • 3 ½ fl oz water

Cooking instructions for Paneer-Stuffed Peppers:

  • Warm up your oven to 375 degrees F.
  • Lay out the halved peppers onto a baking pan and smother it with a tbsp oil oil.
  • Roast them in the oven for 25 minutes or until they turn soft; set aside once cooked to desired doneness.
  • Drizzle rest of the oil in a saucepan and heat until it shimmers.
  • Throw in the cumin seeds and stir fry for half a minute or until they give out a pleasant, spicy aroma.
  • Stir in the chopped onion and sauté for 3-4 minutes, while stirring from time to time, until it caramelizes.
  • Scatter the tomatoes, beans, peas and ginger into it and sprinkle a dash of salt as well as ground spices over them.
  • Stir them all together until mixed well and cook for 10 minutes or until the tomatoes are softened enough to appear mushy.
  • Crumble the paneer or ricotta into the mixture and give them a nice stir to mix well.
  • Cook the mixture until it starts simmering and continue to do so for a couple of minutes.
  • Whisk in the double cream and continue to simmer until warmed through.
  • Sprinkle the chopped cilantro on top and simmer the sauce for 5 minutes, while splashing water into it at times to prevent it from drying out.
  • Cook until most of the liquid is absorbed.
  • Warm up the grill to maximum heat.
  • Meanwhile, spoon small portion of the cooked paneer into the roasted pepper halves and grill them until the stuffing turn golden.
  • Arrange them onto serving plates and serve warm.
