How to Cook Sweet Potato Bhajis
Yields: 24 bhajis or fritters

Ingredients needed to make Sweet Potato Bhajis:
For the fritters:
- 1 sweet potato, scrubbed and grated
- 2 onions, peeled and finely sliced
- 1 tbsp fresh cilantro, finely chopped
- 1 red chili, stemmed and finely chopped
- 1 tbsp vegetable oil, plus more for deep-frying
- 8 oz chickpea flour
For the curry dressing:
- 1 tbsp curry paste
- 2 fl oz vegetable oil
- 5 fl oz groundnut oil
- 2 fl oz malt vinegar
For serving:
- Greek-style yogurt
- Handful of watercress
Cooking instructions for Sweet Potato Bhajis:
- For the fritters, place the chickpea flour in a large bowl and stir in 3 1/2fl oz water until they blend together to form a smooth, semi-thick batter.
- Drizzle oil in a skillet and heat it over moderate flame until it starts shimmering.
- Toss the chopped onions into it and sauté for 5-10 minutes, stirring often, until they caramelize.
- Tip the browned onions into the batter and stir them into the mixture along with chili, sweet potato as well as cilantro until they are distributed evenly.
- Pour enough oil into a heavy-bottomed saucepan, so that half of it is filled and heat it to 350 degrees F.
- Take portions of the fritter mixture in your palms and roll them into small balls.
- Lower them into the hot oil, few at a time, and deep-fry them for a couple of minutes or until they crisp up and turn golden brown.
- Drain them out onto a paper towel-lined plate and set aside.
- To make the curry dressing, whisk 1 tbsp hot water into the curry paste until they blend into a smooth paste.
- Beat in a splash of vinegar, followed by the oils by after another and season with a dash each of seasonings.
- Pile up the watercress on the serving plates and place the sweet potato fritters in them.
- Spoon in the curry dressing on top and serve alongside a bowl of yogurt.
