How to Cook Gingerbread Pancakes

Ingredients needed to make Gingerbread Pancakes:
- 8 oz self raising flour
- 1 tsp baking powder
- Pinch of salt
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 2 drops vanilla extract
- 1 egg
- Zest of ½ lemon, finely grated
- ½ pint semi-skimmed milk
- 12 Parma ham slices
- 3 tbsp soft light brown sugar
- 4 tbsp sunflower oil
For serving:
- 3 ½ fl oz sour cream
- 3 ½ fl oz maple syrup
Cooking instructions for Gingerbread Pancakes:
- Warm up your oven to 225 degrees F.
- Place the flour in a large bowl and stir in baking powder, salt, sugar as well as a dash of ground spices until just combined.
- Make a depression in the middle with your fingers and sprinkle the grated lemon zest into it.
- Pour the vanilla extract and milk into the well, few splashes of the latter from time to time, while stirring it into the mixture until they blend together to form a smooth batter.
- Crack the egg into it and beat it into the batter until fully incorporated.
- Drizzle some of the oil in a large skillet and heat it over moderate flame and toss the Parma ham slices into it.
- Fry each side for a couple of minutes and transfer them into a paper towel-lined plate, with th help of tongs; keep warm until the pancakes are ready.
- Lower the heat of to low and pour in more oil into it.
- Ladle 1/12 of the batter and spread it into 3 ¼’’ wide circle, using the back of the ladle.
- Cook one side for a couple of minutes or until the base turns golden and flip it over to cook the other side for another 2 minutes.
- Slide it onto a baking dish and pop it into a hot oven to keep warm until all the pancakes are cooked.
- Make 11 more pancakes until all the batter is used up and place 3 of them in each serving plate.
- Stack the 3 Parma ham slices on top of each serving and drizzle the maple syrup over them.
- Place a dollop of sour cream on top and serve warm.
