How to Cook Spicy Rice Noodles with Grilled Steak

Ingredients needed to make Spicy Rice Noodles with Grilled Steak:

For the vinaigrette:

  • 1 tbsp chile-garlic paste
  • 1 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp fish sauce
  • 2 tbsp rice vinegar
  • 1 tsp kosher salt
  • 1 ½ tsp granulated sugar

For the noodles and steak:

  • 1 lb flank steak, fat trimmed and sinew removed
  • ½ lb dried rice stick noodles
  • 1 ½ lb baby bok choy, cleaned, ends chopped off and cut into 1’’ pieces
  • ¼ cup fresh cilantro, roughly chopped
  • 2 tbsp salted peanuts, roasted and roughly chopped
  • 1 tsp olive oil
  • Kosher salt and freshly ground black pepper to taste
  • 1 medium lime, sliced into 4 wedges

Cooking instructions for Spicy Rice Noodles with Grilled Steak:

  • To make the vinaigrette, dump all its ingredients in a medium, glass bowl and whisk them thoroughly until well combined; set aside until necessary.
  • To prepare the noodles and steak, spread a single layer of absorbent papers across a baking sheet and keep aside.
  • Fill a medium saucepan with water and bring it to a boil over high flame.
  • Toss the bok choy chunks into it and continue to boil briefly for a minute to blanch, so that they soften yet retain their crunchiness.
  • Return the cooking water back to boil.
  • Pile up the noodles in a large bowl and pour in the boiling water until completely immersed.
  • Give it  a nice stir to prevent the noodle strands from clinging to each other and set aside, covered, for 5 minutes, or until they soften and pliant.
  • Tip them into a colander to drain and set aside.
  • Smother either side of the steak with a good lug of oil and rub a dash each of salt plus ground black pepper all over it.
  • Heat a griddle pan over moderately high heat for a couple of minutes and place the prepared steak on it.
  • Cook each side of the meat for 6 minutes, until it is seared on both sides and cooked to medium-rare doneness.
  • Place it into a chopping board and let it cool down slightly for 5-10 minutes.
  • Pile up the cooked noodles back into a large bowl and throw in the cooked bok choy.
  • Carve out ¼’’ thick slices from the steak and lay them on top of the noodles.
  • Drizzle the prepared vinaigrette over the ensemble and sprinkle the chopped cilantro on top.
  • Toss them all together using a pair of tongs until well mixed and coated properly with the dressing.
  • Sprinkle the roasted peanuts on top and serve alongside lime wedges.
