Bitter Melon Sir Fry with Ground Pork
This bitter melon stir fry with ground pork is a Cantonese or Indonesian dish.
The slightly bitter melon stuffed around ground pork is a great flavor combination. You can add additional items to the stir fry if you like, such as carrots, tofu, onion, peppers, pea pod, bean sprouts etc.
Feel free to toss in just about any additions that you like!
Bitter Melon Sir Fry with Ground Pork
Ingredients
- 2 bitter melons, halved longitudinally, cored and ¼’’ thick slices
- For the ground pork:
- 3 oz ground pork
- ½ tsp sugar
- 1 tsp rice wine
- ½ tsp minced ginger
- ¼ tsp salt
- For the sauce:
- 3 tbsp black beans, mashed
- 3 dried red chilies
- 2 garlic cloves, grated
- 1 tbsp sugar
- 1 tbsp rice wine
- 2 tbsp fish sauce
- ½ tsp salt
- For the slurry:
- 5 tbsp vegetable oil
- 2 tsp cornstarch
- ¼ cup water
Instructions
- Place the meat in a bowl, along with rest of its ingredients and stir them all together until well combined.
- For the sauce, place all its ingredients in another bowl and whisk them together until they blend into a uniform mixture.
- Whisk the cornstarch in water until they form a smooth mixture and set aside.
- Warm up your wok over high flame and heat half of the oil in it until it shimmers.
- Place the pork mixture into the wok and cook it for 8-10 minutes, stirring often, until they brown nicely.
- Remove from heat and set aside in a bowl.
- Reheat the wok to high flame and heat up rest of the oil in it.
- Toss the bitter melon slices into it and sauté for about 5-7 minutes, stirring often, over high flame or until they soften slightly yet retain their crunchiness.
- Pour in the sauce mixture and give it a nice stir to coat the bitter melon slices with it.
- Remove from heat and whisk in the slurry into the hot sauce until well combined without any clumps.
- Add a splash of water into the mixture and return the wok to slow flame.
- Bring it to a simmer and continue to do so briskly for half a minute.
- Dump the browned meat into the wok and stir them all together to mix well.
- Tip it into a serving bowl and serve hot.
