How to Cook Friulian Leg of Lamb

Ingredients needed to make Friulian Leg of Lamb:
- One leg of lamb, weighing about 2 lb
- 3 oz pancetta slice, diced
- 1 onion, peeled and finely sliced
- 1 garlic clove, peeled and squashed
- 2 tsp ground cinnamon
- 1/3 cup tomato sauce
- 1 pint low-sodium beef broth
- ¼ cup unsalted butter
- Salta d freshly ground black pepper to taste
- Boiled potatoes, to serve
- Cooked polenta, to serve
Cooking instructions for Friulian Leg of Lamb:
- Make criss-cross slashes across the leg, each about an inch apart with the help of a sharp knife.
- Add a knob of butter into a heat-proof casserole dish and melt it over moderate heat until it foams.
- Throw in the diced pancetta and sauté them for a while until they brown.
- Stir in the garlic as well as onions and continue to sauté for 10 more minutes or until the onions caramelize.
- Place the leg of lamb on top of the sautéed mixture and cook until it browns.
- Sprinkle the ground cinnamon as well as a dash of seasonings over the meat and smother it with tomato sauce.
- Pour in the beef broth and stir them all together until well combined.
- Reduce it to a simmer and place a lid on top to cover while simmering it over slightly reduced heat for an hour.
- Once cooked, lift the leg of lamb onto a large serving platter and continue to simmer the cooking liquid over moderate flame, stirring often, for about 5-6 minutes or until it thickens slightly.
- Drizzle it all over the meat and serve alongside boiled potatoes and polenta.
