How to Cook Chicken Chimichangas
Serves: 6
Ingredients needed to make chicken chimichangas:
- 1 ½ cup cooked chicken, diced
- 6 flour tortillas, each about 8’’ wide
- 2/3 cup hot tomato salsa
- Dash of picante sauce, for serving
- ¼ cup green onions, finely chopped
- Some more chopped green onions, for garnishing
- 1 ¼ cup cheddar cheese, shredded
- ½ tsp dried oregano, crushed
- 1 tsp ground cumin
- 2 tbsp margarine
Cooking instructions for chicken chimichangas:
- Preheat your oven to 400 degrees F and brush the bottom as well as sides of a baking dish with melted margarine.
- Add a cup of shredded cheese to the hot tomato salsa and whisk them into a creamier mixture.
- Sprinkle the crushed oregano and cumin on it and stir again to mix.
- Add the onions, followed by diced chicken and give it a nice stir until they are evenly distributed throughout the sauce.
- Place a tortilla on your kitcken counter and pour ¼ cup of the above mixture along the middle of it.
- Wrap its opposite sides over the chicken mixture and fold one of its smaller open ends into the rolled tortilla.
- Place the tortilla on the pre-greased baking dish with its seam side facing down and make the rest of the tortilla rolls in a similar manner.
- Arrange them side by side in the baking dish and smother their surface with rest of the melted margarine.
- Place the baking dish into the oven and bake at the preheated temperature for about 25 minutes or until the surface attains a delightful golden brownish hue.
- Remove from oven and spread the remaining shredded cheese over it.
- Pour the picante sauce over the tortillas and top it up with chopped green onions.
- Serve right away!
