How to Cook Roasted Goose with Chickpeas

Ingredients needed to make Roasted Goose with Chickpeas:
- One goose, weighing around 11 lb
- 2 (14 oz each) cans chickpeas, drained
- 2 lb 4 oz sausage meat
- 2 large onions, coarsely chopped
- 6 Maris Piper potatoes, quartered
- Freshly grated zest and juice of 2 lemons
- ½ oz mint leaves, chopped
- Salt and freshly ground black pepper to taste
- Olive oil, as required
Cooking instructions for Roasted Goose with Chickpeas:
- Warm up your oven to 425 degrees F.
- Heat a lashing of oil in a skillet and throw in the onions.
- Stir fry them for 5-10 minutes or until they caramelize slightly.
- Dump the chickpeas into the skillet and give it a nice stir to mix well.
- Sauté the mixture for 2-3 minutes, stirring often and mashing the chickpeas with the back of a spoon, until heated through and they form a slightly chunky paste.
- Place the sausage meat in a bowl and sprinkle the chopped mint and grated lemon zest over it.
- Add a splash of lemon juice and stir them all together to mix well.
- Fold in the mashed chickpea-onion mixture and work them together until they blend thoroughly.
- Return the mixture into the pan and fry for a while, until the meat browns slightly; adjust the seasonings.
- Place the bird into a large roasting pan and fill its cavity with half of the meat-chickpea mixture.
- Stuff the lemon shells into it and roll the remaining stuffing into small globes.
- Put it into the oven and roast for an hour.
- Lower the oven temperature to 350 degrees F and scatter the potatoes as well as meat balls around the goose.
- Continue to roast the goose for another couple of hours or until its skin turns crisp and turns into a dark shade of brown.
- Take it out of the oven and wrap the surface with a sheet of aluminum foil.
- Let it rest for about 15 minutes or until cool enough to handle.
- Carve out thick slices and serve warm alongside the roast potatoes and meatballs.
