How to Make Spicy Salami Sandwiches

Ingredients needed to make Spicy Salami Sandwiches:
For the tapenade:
- 2 tbsp olive oil
- 2 garlic cloves
- 1 tbsp capers, drained
- 8 oz black pitted olives, drained
- ¼ cup packed fresh parsley leaves
- 1 tbsp fresh juice of a lemon
- ¼ tsp red pepper flakes, dried
- 1 tbsp red wine vinegar
- Sea salt and freshly ground black pepper to taste
For the sandwiches:
- 4 foccacia rolls
- 4 canned roasted bell peppers, drained
- 2 cups packed arugula
- ¼ cup crumbled goat cheese
- 4 oz Genoa salami, sliced
Cooking instructions for Spicy Salami Sandwiches:
- To make the tapenade, toss the garlic, olives, capers and parsley into a food processor and sprinkle a dash of red pepper flakes into it.
- Add splashes of olive oil as well as fresh lemon juice into it and finish it off with a lashing of olive oil.
- Blitz them 8-10 times, until they blend thoroughly into a finely chopped mixture.
- Stir in a dash of salt and ground black pepper generously to season and set aside.
- Slice each focaccia rolls into equal halves and spread a tbsp each of the above mixture, across ether halves of the roll.
- Arrange the jarred bell pepper on top of the tapenade spread, in the bottom half of each roll and top it up with the salami.
- Spread a layer of leafy green on top of the salami and crumble the goat cheese over it.
- Place the upper half of the bread roll on top and serve right away.
- Munch on it and enjoy!
