How to Cook Salt-Fried Pork Chops

Ingredients needed to make Salt-Fried Pork Chops:

  • 8 oz pork chops, skin on
  • 2 tsp fermented black beans
  • 2 tbsp chili bean paste
  • 5 green onions, both green and white parts
  • 1 tsp light soy sauce
  • 2 tbsp cooking oil
  • ½ tsp kosher salt
  • ½ tsp sugar

Cooking instructions for Salt-Fried Pork Chops:

  • Slice the green onions into 1’’ chunks and set aside.
  • Drizzle oil in a wok and tilt it slightly to spread the oil throughout its base.
  • Heat it over high flame until it sizzles but doesn’t smoke.
  • Place the pork chops on top, in batches, and sear one side for about 4-5 minutes or until it browns slightly but uniformly.
  • Flip it over and cook the other side in a similar fashion, until juices ooze out from the meat.
  • Transfer them to a plate, lined with kitchen paper to get rid of excess grease and skim off the pork fat in a fat, leaving only a tbsp of the fat in it.
  • Turn down the heat to moderate low and spoon in the fermented black beans, followed by a dollop of chili bean paste.
  • Stir them all together to mix well and sauté briskly, while stirring often, for half a minute or until it gives out a delicious spicy aroma.
  • Return the pork chops to the sautéed mixture and give it a give it a good stir to coat well.
  • Continue to stir fry rigorously for a minute and add a splash of soy sauce and sprinkling of sugar.
  • Stir them all together, along with the green onion slices and sauté for another minute, or until the latter are just cooked.
  • Taste and adjust the seasonings and place the pork chops on serving plates.
  • Spoon any leftover green onions on top of each pork chop and serve right away.
