How to Cook Kulebyaka with Mushrooms

Kulebyaka is a traditional filed Russian pie. It is often as pretty as it is tasty! Kulebyaka can be made with meat and salmon is rather popular. This one is made with mushrooms. Serve it as either a starter or a main course.

Traditional Kulebyaka, a Russian pie, made with mushrooms.
  • For the pastry:
  • Flour, 350 g (the pastry should be delicate and stick to the hands a little bit, but easy to roll out)
  • Fresh yeast, 20 g
  • Butter, 200 g
  • Milk, ½ glass (about 100-125 ml)
  • Sugar, 1 teaspoon
  • Salt, ¼ teaspoon
  • 3 eggs
  • For the filling:
  • Cabbage, 700 g
  • Mushrooms, 400-500 g
  • Garlic, 3-5 cloves (by taste)
  • 2-3 middle size onions
  • Olive oil, 30 g
  • Salt and pepper (season by taste)
  1. Prepare yeast pastry. Heat a milk (to be warm, not hot). Dissolve sugar and the yeast in warm milk. Leave it in warm place for 30 minutes, until bubbles occur. Then add eggs, soft or melted butter, salt and flour. Knead the pastry carefully – remember to keep it delicate, sticking to the hands a little bit. Then leave the pastry for 1-2 hours, but if you have time, even for 3 hours, in warm place, without draughts.
  2. Prepare filling. Grate the cabbage (finely at your taste) and onion; stew it using olive oil for about 20-25 minutes and add salt and pepper at the end. Wash and dry up the mushrooms (choose at your taste the kind); cut its finely and stew in olive oil for 10-15 minutes. Add salt, pepper and finely chopped cloves of garlic 2-3 minutes before end of cooking.
  3. Place prepared pastry on the table and roll down to have rectangular form. This pastry amount will let you to prepare 2 square pieces of pastry, each will feet standard baking tray. Take baking tray and oil it with butter. Transfer rectangular-shaped pastry to the baking tray, place the filling as sausage at the middle part of rectangular and pinch the edges together. Smear the top of kulebyaka with whisked egg yellow with the milk; punch the top in several places with a fork.
  4. Preheat the oven for 180º C and cook the kulebyaka about one hour.
