Chicken Rice Casserole

Chicken rice casserole is a family favorite. You can make it with any vegetables, and I particularly like to use peas or like to make a chicken broccoli rice casserole.  To make this on the healthy side, use brown rice instead of white and go easy on the cheese.

This chicken rice casserole recipe uses Rotisserie chicken, which is a great way to use up leftovers.

This recipe uses Parmesan and Havarti cheeses. You can also use cheddar for an extra cheesy chicken and rice casserole.

Chicken rice casserole. This cheesy chicken and rice casserole is a great way to use Rotisserie chicken for an easy family dinner.
Ingredients
  • 1 cup medium-grain white or brown rice
  • 2 cups rotisserie chicken, skinned and shredded
  • 4 scallions, sliced
  • 1 plum tomato, chopped
  • 2 cups broccoli florets
  • 2 garlic cloves, finely chopped
  • ¼ cup Parmesan cheese, grated
  • 1 cup dill Havarti cheese, diced
  • ¼ cup sour cream
  • 2 tbsp unsalted butter
  • 2 cups low-sodium chicken broth
  • Kosher salt and freshly ground black pepper
Instructions
  1. Warm up your oven to 4235 degrees F.
  2. Add a knob of butter into an ovenproof skillet and melt it over moderate heat.
  3. Toss ¾ of the sliced scallions and chopped garlic into it and sauté for a couple of minutes, stirring at times, until they soften.
  4. Empty the cups of chicken, broccoli and rice into it and scatter the chopped tomatoes over it.
  5. Sprinkle a tsp of salt and fair amount of ground black pepper over them and stir them all together to mix well.
  6. Place the chicken stock in a bowl and whisk in sour cream until well combined.
  7. Drizzle it over the chicken-rice-veggie mixture and give them a nice stir to coat well.
  8. Bring the sauce to a simmer and sprinkle half of both variants of cheese on top.
  9. Place a lid on top to cover tightly and place it in the oven to bake for 20 minutes, or until most of the cooking liquid is absorbed by the rice and it is cooked through.
  10. Meanwhile, preheat the broiler.
  11. Remove the lid and top it up with rest of the cheeses.
  12. Place in the hot broiler and broil for a couple of minutes or until the cheese melts and turns bubbly.<
  13. Finish it off with remaining sliced scallions and serve warm.
